Kothimbirichi bhaji is a Maharashtrian dish. It is a dry veg prepared from coriander leaves and roasted gram flour. It can be served with phulka, chapati or jowar bhakri.
Measurement: 1 Cup = 180 ml
Serves: 3 to 4
Ingredients:
- Kothimbir (coriander leaves) - 1 bunch
- Onion (chopped) - 1 large
- Besan (gram flour) - 3/4 to1 cup
- Garlic (crushed) - 15 cloves
- Mustard seeds - 1/3 tsp
- Cumin seeds - 1/3 tsp
- Turmeric powder - 1/3 tsp
- Chilly powder - 1/3 tsp
- Coriander powder - 1/3 tsp
- Cumin powder - 1/4 tsp
- Garam masala - 3/4 to 1 tsp
- Oil - 2 tbsp
- Salt to taste
Procedure:
- Discard the coriander roots and thick stems, wash the leaves and thin stems. Chop them.
- Roast besan till it gives out aroma and keep it aside.
- Heat oil in a kadai, add mustard seeds and let them splutter.
- Add cumin seeds and let them crackle.
- Add onion and stir fry till it turns translucent.
- Now, add garlic and turmeric powder. Stir fry till onion turns golden brown.
- Add coriander leaves and stir fry for 1 to 2 min.
- Add all the dry spice powders and salt. Stir fry for 2 min.
- Add roasted gram flour and mix well. Keep it covered for 2 min.
- Serve hot with phulka, roti or jowar bhakri.
Tip:
- This dish can be prepared even without onion and garlic.
