Malvani masala is the spice blend used in spicy Malvani curries.
Makes: 4 tbsp
- Red chillies - 5
- Kashmiri mirchi - 2
- Corriander seeds - 1 tbsp
- Cumin seeds - 1/4 tsp
- Caraway seeds / shahijeera - 1/4 tsp
- Mustard seeds - 1/4 tsp
- Fennel seeds - 1 tsp
- Cinnamon - 1" stick
- Star anise - 5 petals (seeds removed)
- Cloves - 3
- Peppercorns - 4
- Black cardamom - 10 to 15 seeds
- Nutmeg - 1/8th
- Turmeric powder - 1/4 tsp
- Nagkesar - 1/3 tsp

Procedure:
- Dry roast all the spices together or separately except turmeric powder.
- Let them cool.
- Add turmeric powder and grind to a fine powder.
- Use in the preparation of malvani curries.
Tip:
- This is the minimum quantity that can be made. It makes 4 tbsp powder approx. You may prepare in a larger quantity.
- You may add other spices like bayleaf, khuskhus, badal phool etc to suit your taste.
