Cheesy mushroom corn & spinach toast, the name itself describes the dish. It can be served for breakfast or evening tea time snacks.
Serves: 3 to 4
Ingredients:
- Mushrooms (chopped) - 8 to 10 medium size
- Corn (boiled) - 1/2 to 3/4 cup
- Spinach (chopped) - 10 to 12 leaves
- Onion (chopped) - 1 medium
- Pepper powder - 1/4 tsp
- Chilly flakes - 1/2 tsp (optional)
- Cheese spread - 2 tbsp
- Processed cheese - as per your requirement
- Butter - as per your requirement
- Bread slices - 8
- Salt to taste
- Melt 1 tsp butter in a pan and add onion, fry till translucent.
- Add spinach and mushrooms, fry till moisture evaporates.
- Grind corn coarsely and add it to the mixture.
- Add salt, pepper and chilly flakes.
- Stir fry for few seconds.
- Put off the flame.
- Add cheese and cheese spread, mix well.
- Butter the slices on one side.
- Now, there are two options: either you spread the mixture in between two slices and grill/toast them OR toast them and spread the mixture. (Buttered side should be on top)
- Cut diagonally, garnish with grated cheese and serve with ketchup.
