Cheesy Mushroom Corn & Spinach Toast


Cheesy mushroom corn & spinach toast, the name itself describes the dish. It can be served for breakfast or evening tea time snacks.

Serves: 3 to 4

Ingredients:
  1. Mushrooms (chopped) - 8 to 10 medium size
  2. Corn (boiled) - 1/2 to 3/4 cup
  3. Spinach (chopped) - 10 to 12 leaves
  4. Onion (chopped) - 1 medium
  5. Pepper powder - 1/4 tsp
  6. Chilly flakes - 1/2 tsp (optional)
  7. Cheese spread - 2 tbsp
  8. Processed cheese - as per your requirement
  9. Butter - as per your requirement
  10. Bread slices - 8
  11. Salt to taste
Procedure:
  • Melt 1 tsp butter in a pan and add onion, fry till translucent.
  • Add spinach and mushrooms, fry till moisture evaporates.
  • Grind corn coarsely and add it to the mixture.
  • Add salt, pepper and chilly flakes.
  • Stir fry for few seconds.
  • Put off the flame.
  • Add cheese and cheese spread, mix well.

  • Butter the slices on one side.
  • Now, there are two options: either you spread the mixture in between two slices and grill/toast them OR toast them and spread the mixture. (Buttered side should be on top)
  • Cut diagonally, garnish with grated cheese and serve with ketchup.
