Ingredients:
- Baby Brinjal (cubed)- 4 - 5
- Potato (peeled & cubed) - 2 - 3 medium
- Roasted peanut powder - 1.5 to 2 tbsp
- Mustard seeds - 1/3 tsp
- Hing - 1/4 tsp
- Turmeric powder - 1/8 tsp
- Goda masala - 1.5 tsp
- Chilly powder - 1/3 tsp
- Tamarind pulp - 1.5 to 2 tbsp
- Jaggery (grated) - 1 to 1.5 tbsp
- Oil - 1 tbsp
- Salt to taste
- Heat oil in a pan and add mustard seeds.
- Once mustard seeds splutter, add hing turmeric powder, goda masala and chilly powder.
- Add brinjal and potatoes, mix well.
- Add water and salt.
- Cook it covered or uncovered.
- When potatoes are about to get cooked, add tamarind pulp, jaggery and roasted peanut powder.
- Simmer.
- Serve hot with chapatis.
Tip:
- You may use garam masala, if you don't have goda masala.
- You may use onion too in the preparation.
