Udupi Sambar Powder is the spice mix used in the preparation of sambar, which is an accompaniment to most of the South Indian Snacks.
Ingredients:
- Coriander seeds - 6 tsp
- Chana dal - 1.5 tsp
- Urad dal - 1 tsp
- Fenugreek seeds - 1/3 tsp
- Cumin seeds - 1 tsp
- Byadgi red chilies - 2
- Kashmiri chilly - 1
- Hing - 1/2 tsp
Procedure:
- Dry roast all the ingredients numbering 1to 7, one by one or together.
- Let it cool.
- Add hing and grind.
Tip:
- You may roast 1/2" cinnamon stick too.
- You may add another 5 tsp of coriander seeds to get sambar of another flavour.
- This powder can be used even in the preparation of dry vegetables.
