Red Coconut Chutney is an accompaniment to the South Indian snacks.
Measurement : 1 Cup = 180 ml
Serves: 3 to 4
Ingredients:
- Scrapped coconut - 1 1/4 cup
- Onion (chopped) - 2 tbsp
- Garlic Cloves - 6 - 8
- Ginger (chopped) - 1/3 tsp
- Kashmiri mirchi - 1
- Byadgi mirchi - 1-2
- Chana dal - 1 tsp
- Coconut oil - 1 tsp
- Tamarind -a small ball
- Salt to taste
- Heat oil in tempering pan and add chana dal to it.
- Slightly fry chana dal and add onion.
- Fry onion till translucent and add red chillies, ginger and garlic.
- Stir fry for 5 to 10 seconds.
- Grind all the ingredients by adding 1/2 cup water to a smooth paste.
- Serve with idli/ dosa/ uttapam/ appe.
