Onion Appe (Paddu)


Ingredients:
For the batter:
  1. Urad Dal - 1/2 cup
  2. Parboiled rice - 1 1/4 cup
  3. Fenugreek seeds - 1/2 tsp
  4. Salt to taste 
Procedure:
  • Wash urad dal and rice at least thrice.
  • Soak dal, rice and fenugreek seeds for at least 6 to 7 hrs. Water level should be much above.
  • Drain rice and dal, grind it to a smooth paste by adding little water. Pour this batter in a vessel and rest it for at least 8 hrs at room temperature to ferment. It will double after fermentation.
For making Appe:
  1. Batter - 2 cups
  2. Onion (chopped) - 1/2 cup
  3. Green chilly (chopped) - 1
  4. Ginger (grated) - 1/2 tsp
  5. Curry leaves (chopped) - 3-4
  6. Ghee for frying
  7. Salt to taste
Procedure:
  • Take a mixing bowl and mix all the ingredients, add water if necessary.
  • Heat greased appe pan and pour the batter, keep it covered.
  • For 5 to 10 seconds keep the flame high and later keep it low to medium for 3 - 4 min.
  • Drizzle ghee on top and turn the side,fry for a min or 2.
  • Serve hot with coconut chutney.
Tip:
  • You may soak 2 tbsp poha with rice and dal.
  • You may make plain appe to.
  • You may even use left over dosa batter.
  • Don't make the batter too thick or too thin.
