Goan Samaar (Basic Spice Powder)


Goan Samaar is the basic spice mix used in Saraswat cuisine.

Ingredients:
  1. Coriander seeds - 10 to 11 tsp
  2. Peppercorns - 1 tsp
  3. Red chillies - 3 to 4
  4. Cloves - 2 to 4
  5. Cinnamon - a tiny piece
  6. Cumin seeds - a pinch
  7. White peas - 5 (optional)
Procedure:
  • Dry roast all the ingredients.
  • Let them cool and grind to a fine powder.
  • Use it in certain Goan dishes like dal kanyacho rosdangar etc.
Tip:
  • You may add some other spices also as per your choice.
  • It can be prepared in larger quantity and stored in a glass jar.
