Broccoli Potato Soup


Broccoli potato soup is a creamy  and non spicy soup. It is cooked broccoli, potato and onion are blended to give a creamy texture. The soup is finished with fresh cream.

Measurement: 1 Cup = 180 ml
Serves: 3 to 4

Ingredients:
  1. Broccoli (florets) - 3 cups
  2. Onion (chopped) - 1 small size
  3. Potato (chopped) - 1 medium size
  4. Butter - 1 tsp
  5. Fresh cream - 3 tbsp
  6. Maida - 1 tsp (optional)
  7. Pepper powder - a pinch
  8. Water - 5 cups
  9. Salt to taste
Procedure:
  • Melt butter in a saucepan.
  • Add onion and stir fry till translucent.
  • Add broccoli and potato, stir fry for half a min.
  • Add 2 1/2 cups of water and cook on high flame. (Uncovered)
  • Once it gets cooked, let it cool and blend it by adding maida.
  • Pour the blended soup into the saucepan. 
  • Add remaining water and bring it to boil.
  • Add fresh cream and simmer for a min.
  • Sprinkle pepper powder.
  • Serve hot with garlic bread.
