Roasted and mashed brinjals cooked with stir fried onion and tomatoes with seasonings. This is a brinjal mash in north Indian style.
Serves: 4
Ingredients:
- Brinjals - 2 medium size
- Onion (chopped) - 2 medium size
- Tomatoes (chopped) - 2 medium size
- Ginger (grated) - 1/2 tsp
- Garlic (crushed) - 1 tsp
- Green chilly (chopped) - 1
- Turmeric powder - 1/8 tsp
- Red chilly powder - 1/4 to 1/3 tsp
- Coriander powder - 1/8 tsp
- Garam masala - 1/2 tsp
- Ghee - 1.5 tbsp
- Coriander leaves (chopped) - for garnishing
- Salt to taste
- Roast, peel and mash the brinjals.
- Heat ghee in a pan and add onion, stir fry till it turn slightly golden brown.
- Add all the ingredients numbering 4 to 10 and sir fry for a few seconds.
- Add tomatoes and sprinkle little salt.
- Stir fry till tomatoes soften.
- Add mashed brinjals and salt to taste.
- Garnish with coriander leaves.
- Serve with phulka or chapati.
