Capsicum stuffed with a spicy filling and stir fried.
Serves: 3
Ingredients:
- Baby capsicum (deseeded) - 7 - 8
- Onion (chopped) - 2 medium
- Tomatoes (chopped) - 2 medium
- Potatoes (boiled and mashed) - 2 medium
- Corriander leaves (chopped) - 2 tbsp
- Cumin powder - 1/2 tsp
- Ginger garlic paste - 1.5 tsp
- Kitchen king masala - 1/2 tsp
- Garam masala - 1/4 tsp
- Chilly powder - 3/4 tsp
- Turmeric powder - 1/3 tsp
- Amchur - 1/4 tsp
- Paneer (shredded) - 100 gm
- Oil - 4 tsp
- Salt to taste
Procedure:
- Heat 2 tsp oil and saute onion.
- Add 1/4 tspn turmeric powder and tomatoes.
- Once tomatoes are done add ginger garlic paste, cumin powder, garam masala, kitchen king masala, chilly powder, amchur and salt to taste.
- Add potatoes, paneer and corriander leaves. Mix well on medium flame.
- Let it cool slightly.
- Stuff the mixture in capsicum.
- Heat 2 tsp tspn oil in a wok and remaining turmeric powder and fry capsicum on all sides on low flame by covering, sprinkle little salt OR microwave covered at 100% power for 4 min.
- Serve hot as a main dish.
