Stuffed Capsicum


Capsicum stuffed with a spicy filling and stir fried.

Serves: 3
Ingredients: 
  1. Baby capsicum (deseeded) - 7 - 8
  2. Onion (chopped) - 2 medium
  3. Tomatoes (chopped) - 2 medium
  4. Potatoes (boiled and mashed) - 2 medium
  5. Corriander leaves (chopped) - 2 tbsp 
  6. Cumin powder - 1/2 tsp
  7. Ginger garlic paste - 1.5 tsp
  8. Kitchen king masala - 1/2 tsp
  9. Garam masala - 1/4 tsp
  10. Chilly powder - 3/4 tsp
  11. Turmeric powder - 1/3 tsp
  12. Amchur - 1/4 tsp
  13. Paneer (shredded) - 100 gm
  14. Oil - 4 tsp
  15. Salt to taste
Procedure:
  • Heat 2 tsp oil and saute onion. 
  • Add 1/4 tspn turmeric powder and tomatoes. 
  • Once tomatoes are done add ginger garlic paste, cumin powder, garam masala,  kitchen king masala, chilly powder, amchur and salt to taste. 
  • Add potatoes, paneer and corriander leaves. Mix well on medium flame. 
  • Let it cool slightly.
  • Stuff the mixture in capsicum. 
  • Heat 2 tsp tspn oil in a wok and remaining turmeric powder and fry capsicum on all sides on low flame by covering, sprinkle little salt OR microwave covered at 100% power for 4 min.
  • Serve hot as a main dish.
