Italian Eggplant (Brinjal) Casserole
Ingredients and procedure:
- Layer 1 - Shallow fried brinjal slices
- Layer 2 - Ricotta cheese (paneer), bread crumbs
- Layer 3 - Sauce made with Tomato puree, chopped onion, sugar, salt & pepper (cooked for 5 mins)
- Topmost Layer - Processed cheese
- Bake at 180 degrees for 20 mins.
