Pumpkin Soup




Pumpkin soup is a kid's friendly soup. It can be given to infants too (9 months +) in little quantity, who are introduced to adult food. When the baby is getting introduced to an adult food, the vegetables which are started initially are pumpkin, tomato, carrot and beetroot. Later, sweet potato, potato, spinach, onion and beans. I used to avoid lady's finger, cauliflower and cabbage for my son. When you start with any such food for an infant, consult your paediatrician. 

Measurement: 1 Cup =180 ml
Serves: 1

Ingredients:
  1. Pumpkin (peeled and cubed) - 1/2 cup
  2. Tomato (chopped) - half of a small tomato
  3. Onion (chopped) - half of a small onion
  4. Butter / pure ghee - 1/2 tsp
  5. Pepper powder - a pinch (optional)
  6. Salt to taste
Procedure:
  • Melt butter /pure ghee in a pan and add onion, stir fry till translucent.
  • Add pumpkin and stir fry for half a min.
  • Add tomato and stir fry for for another half a minute.
  • Add water (1 cup approx).
  • Cook on medium flame.
  • Let it cool.
  • Grind it to a fine paste.
  • Straining is optional.
  • Add water as per your requirement.
  • Bring it to boil and add salt. For infants, salt may be avoided or used in a very little quantity.
  • Sprinkle pepper powder.
  • Serve.
Tip:
  • You may pressure cook it till 1 whistle.
  • If you have cooked moong dal, then spoonful  can be added while grinding.
