Farfalle Pasta in Spinach Sauce




Farfalle pasta is also called bow tie pasta. It is an easy to make Italian dish. Pasta cooked in spinach and white sauce with mushrooms makes it perfect to have as a main dish. It can be served as an evening snacks to kids as well. Instead of spinach sauce you may use pesto.

Measurement: 1 Cup = 180 ml
Serves: 2

Ingredients:
  1. Farfalle Pasta - 1 cup
  2. Spinach (leaves without stems) - 15 to 20
  3. Onion (chopped) - 1 small
  4. Mushrooms (sliced) - 6
  5. Garlic (chopped) - 3 cloves
  6. Milk - 1 cup
  7. Wheat flour / Maida - 1 heaped tsp
  8. Butter - 1 1/2 tsp
  9. Olive oil / Refined oil - 2 tsp
  10. Processed cheese (grated) - as per your requirement
  11. Pepper powder - 1/4 tsp
  12. Mixed herbs - 1 tsp
  13. Salt to taste
Procedure:
  • Cook pasta as per packet instructions. Keep side.
  • Boil milk and keep aside.
  • To make white sauce - melt 3/4 tsp of butter in thick bottomed pan. Add flour and stir fry till it gives out aroma. Let it cool.
  • Add boiled milk to it.Whisk it and bring it to boil by stirring continuously. Add salt and stir well.
  • Chop spinach and keep aside.
  • Heat 1 tsp of oil in a pan, add garlic cloves and onion. Fry till onion turns translucent. Add spinach and stir fry till spinach is cooked. Let it cool. Grind it to a fine paste without water.
  • Heat remaining oil in the same pan, add butter and mushrooms. Stir fry till mushrooms are done. Add pepper powder and mixed herbs. 
  • Add spinach paste. 
  • Add white sauce and mix well.
  • Add pasta, mix well and cook for 2 min.
  • Add grated cheese.
  • Serve hot with garlic bread.
Tip:
  • You may add cooked vegetables like carrots, beans, broccoli along with mushrooms.
