Vangi Bharit




Vangi Bharit is brinjal mash. It is a Maharashtrian side dish.

Measurement: 1 cup = 180 ml
Serves: 2 to 4

Ingredients:

  1. Brinjal - 1 
  2. Onion (chopped) - 1 medium
  3. Roasted peanut powder - 1/2 cup (optional)
  4. Green chillies (chopped) - 2
  5. Garlic (choppped) - 4 to 5 cloves  
  6. Mustard seeds - 1/4 tsp
  7. Cumin seeds - 1/4 tsp
  8. Curry leaes - 5-6
  9. Hing - 1 a pinch
  10. Turmeric powder - 1/4 tsp
  11. Oil - 1 tbsp
  12. Sugar - 1/3 tsp
  13. Salt to taste
  14. Corriander leaves - for garnishing
Procedure:
  • Wash brinjal and apply 2 drops of oil to it.
  • Roast it on direct gas flame on all sides till charred.
  • Pierce it with a fork or knife to check whether cooked.
  • Immerse it in cold water for easy removal of the skin.
  • Mash it.
  • Combine mashed brinjal, peanut powder, salt and sugar.
  • Heat oil in a pan add mustard seeds, cumin seeds, curry leaves, garlic, green chillies, hing and turmeric powder.
  • Add onion and stir fry for a min.
  • Add mashed brinjal mixture and mix well.
  • Cook for a min.
  • Garnish with corriander leaves.
  • Serve with jowar bhakri / chapati / phulka or with dal and rice.
