Paneer Jalfrezi




Paneer jalfrezi is a popular dish in North Indian restaurants. Actually, jalfrezi involves frying of vegetables and spices to produce a dry thick sauce. It is a medium spicy tomato based curry with paneer (cottage cheese).
Serves: 3

Ingredients:
  1. Paneer - 200 to 250 gm
  2. Onion - 2 medium
  3. Capsicum / bell pepper - 1
  4. Tomato - 1 medium 
  5. Carrot - 1 medium
  6. Ginger (grated)  - 1 tsp
  7. Tomato puree (ready made) - 2 tbsp
  8. Green chilly (slit) - 1 to 2
  9. Cumin seeds - 1/4 tsp
  10. Turmeric powder - 1/4 tsp
  11. Kashmiri mirchi powder - 1/3 tsp
  12. Chilly powder - 1/4 tsp
  13. Corriander powder - 1/2 tsp
  14. Cumin powder - 1/2 tsp
  15. Garam masala - 1/2 tsp
  16. Kitchen king masala - 1/2 tsp
  17. Sugar - 1/3 tsp
  18. Kasuri methi - 1/3 tsp
  19. Oil - 1 1/2 tbsp
  20. Corriander leaves - for garnishing
  21. Salt to taste

Procedure:
  • Cut paneer and all the vegetables into long strips.
  • Steam the carrot and keep aside.
  • Heat oil in a pan and add cumin seeds.
  • Add onion and stir fry till onion turns soft.
  • Add capsicum and ginger, stir fry for a min.
  • Add ingredients numbering 9 to 15, stir fry.
  • Add tomato and stir fry for a min.
  • Add green chilly and tomato puree, mix well.
  • Add carrots, paneer, kasuri methi, sugar and salt. Mix gently.
  • Add 1/4 cup water and simmer for 2 min.
  • Garnish with corriander leaves.
  • Serve with roti, paratha etc
