Veg Green Pulav



Ingredients:
  1. Basmati Rice -  1 cup
  2. Onion (sliced) - 2 medium size
  3. Carrot (julienned) - 1/2 cup
  4. French beans (shredded) - 1/2 cup
  5. Cauliflower florets - 7-8 medium size
  6. Fresh Peas - 1/4 cup
  7. Cloves - 5-7
  8. Cinnamon - 1" 2 pieces
  9. Green Cardamom - 2 / Black Cardamom - 1
  10. Peppercorns - 5-6
  11. Bayleaf -1
  12. Green chillies - 2
  13. Garlic cloves - 8-10
  14. Ginger - 4-5 slices
  15. Corriander leaves - handful
  16. Mint leaves - 6-8 (optional)
  17. Oil - 2 tbsp
  18. Water - 2.5 cups
  19. Salt to taste
Procedure:
  • Wash rice and keep it aside for 15 minutes.
  • Heat oil in a pressure cooker and add spices numbering 7 to 11.
  • Add onion and fry till it turns golden brown.
  • Add rice and peas. 
  • Stir fry for sometime, add vegetables and stir fry for 2 min.
  • Grind ingredients numbering 12 to 16 by adding little water.
  • Add water and the paste to rice.
  • Add salt to taste.
  • Pressure cook till 2 whistles.
  • Serve hot.
