Veg Cutlets





Vegetable cutlets is a popular snack. Mixture of boiled potatoes, and other vegetables with some seasoning is formed into patties. The patties are then dipped into maida /corn flour batter and coated with rava or bread crumbs, which are deep fried or shallow fried. Cutlets are suitable as an evening tea time snack, but can also be served for breakfast or as an accompaniment to the main course. It can served with tomato ketchup or green /coconut chutney or with both.

Makes: 10 to 12

Ingredients:
  1. Potatoes (boiled & peeled)- 4 medium size
  2. Carrots (finely diced)- 1/2 cup
  3. Beetroot (finely diced) - one half of a small beetroot
  4. French beans (finely chopped) - 1/2 cup
  5. Shelled peas (blanched) - 1/4 cup
  6. Onion (chopped) - 1 medium size (optional)
  7. Cabbage (finely shredded) - 1/4 cup
  8. Ginger garlic paste - 1 tsp OR 1/2" ginger - grated (if you are avoiding garlic)
  9. Garam Masala - 1/2 tsp
  10. Chilly powder - 1/2 tsp
  11. Turmeric powder - 1/4 tsp
  12. Oil - 1 tbsp
  13. Coriander leaves chopped - 1 tbsp
  14. Maida - 11/2 tbsp
  15. Corn flour - 2 tbsp mix with water and make paste
  16. Bread crumbs/ rava - for coating
  17. Salt to taste
  18. Oil for frying - as per your requirement.

Procedure:
  • Finely cube the potatoes and lightly mash them, keep aside. (Don't mash it the way you mash for parathas)
  • Combine beetroot, carrot and french beans in a small steel container. Sprinkle little salt over it. Cover the container. Pour some water in the pressure cooker and place the container in it. Pressure cook till 3 to 4 whistle.
  • Heat 1 tbsp oil in a pan and fry onion till translucent. (Skip this step, if you are avoiding onion)
  • Add cabbage and fry till it turns slight brown.
  • Add turmeric powder, chilly powder, garam masala and ginger garlic paste or grated ginger.
  • Stir fry for 15 seconds.
  • Add steamed vegetables and mix well.
  • Sprinkle maida and mix well.
  • Sprinkle salt and a tablespoon water.
  • Let it get dried properly.
  • Sprinkle salt over mashed potatoes.
  • Add mashed potatoes and coriander leaves.
  • Mix well and allow it to cool.
  • Divide the mixture into 10 to 12 balls of equal size and shape them. You can use a cutlet mould.
  • Heat oil in a frying pan.
  • Dip the cutlets in corn flour paste and coat with rava.
  • Shallow fry the cutlets on low to medium flame till golden brown on both the sides.
  • Serve hot with ketchup.
Tip:
  • You may avoid onion and garlic for enjoying it on your no onion no garlic days.
