Vaangi Batata Rassa
Ingredients:
  1. Baby Brinjal (cubed)- 4 - 5
  2. Potato (peeled & cubed) - 2 - 3 medium
  3. Roasted peanut powder - 1.5 to 2 tbsp
  4. Mustard seeds - 1/3 tsp
  5. Hing - 1/4 tsp
  6. Turmeric powder - 1/8 tsp
  7. Goda masala - 1.5 tsp
  8. Chilly powder - 1/3 tsp
  9. Tamarind pulp - 1.5 to 2 tbsp
  10. Jaggery (grated) - 1 to 1.5 tbsp
  11. Oil - 1 tbsp
  12. Salt to taste
Procedure:
  • Heat oil in a pan and add mustard seeds.
  • Once mustard seeds splutter, add hing turmeric powder, goda masala and chilly powder.
  • Add brinjal and potatoes, mix well.
  • Add water and salt.
  • Cook it covered or uncovered.
  • When potatoes are about to get cooked, add tamarind pulp, jaggery and roasted peanut powder.
  • Simmer.
  • Serve hot with chapatis.
Tip:
  • You may use garam masala, if you don't have goda masala.
  • You may use onion too in the preparation.
