Panipuri


Panipuri is one of the famous Indian street foods. Small crispy puris filled with potato/ ragda / bundi / steamed moong, tamarind chutney and spicy water. It is also known as Golgappa.

Serves: 4 to 5

Ingredients:
  1. Readymade Puris - 30-35
  2. Filling
  3. Paani
  4. Readymade tamarind chutney - as per your requirement
Paani:
  1. Water - 600 ml
  2. Pudina - 30 - 35 leaves
  3. Coriander (chopped) - 2 tbsp
  4. Green chilly - 1
  5. Ginger - a small slice
  6. Cumin seeds - 1/2 tsp
  7. Fennel seeds - 1/2 tsp
  8. Peppercorns - 5-6
  9. Lemon juice - 2 tbsp
  10. Black salt - 1/2 to 3/4 tsp
  11. Salt - 1 to 1.5 tsp
Filling:
  1. Boiled and mashed potatoes - 3 medium size
  2. Chilly powder - 1/3 tsp
  3. Chaat masala - a pinch
  4. Salt to taste
Procedure:
  • Prepare filling by mixing all the ingredients and keep it aside.
  • Slightly dry roast cumin seeds.
  • Grind pudina, coriander, ginger, green chilly, cumin seeds, fennel seeds and peppercorn by adding little water.
  • Take water in a bowl and the paste to it.
  • Add lemon juice, black salt and salt.
  • Stir well.
  • Break puris in the centre.
  • Place the puris in a plate and fill 1/2 teaspoon filling.
  • Add tamarind chutney and pour pani over it.
  • Serve immediately.
Tip:
  • For the filling, you may use ragda/ bundi/ steamed moong.
  • Tamarind chutney can be prepared by soaking tamarind in water and grinding it. Filter the pulp, add jaggery, salt, black salt, chilly powder and cinnamon/cumin powder. Bring it to boil and use after cooling.
