Gobi Paneer Hariyali (Cauliflower and Cottage Cheese in Green Gravy)


Ingredients:
  1. Cauliflower florets - 2 cups
  2. Cottage cheese - 100 gm (1 1/2 tbsp grated and remaining cubed)
  3. Onion (sliced) - 1 large
  4. Tomato (chopped) - 1 small
  5. Shelled peas (blanched)- 1/2 cup
  6. Spinach - 1/2 bunch
  7. Corriander (chopped) - 1.5 tbsp
  8. Mint leaves - 15 -20
  9. Cashewnuts - 5-6
  10. Green chillies - 2-3
  11. Ginger - 2 to 3 slices
  12. Garlic - 10 - 12 cloves
  13. Clove - 1
  14. Black cardamom seeds - 5-8
  15. Fennel seeds - a pinch
  16. Turmeric powder - 1/8 tsp
  17. Oil - 3 tsp
  18. Sugar - 1/4 to 1/2 tsp
  19. Salt to taste
Procedure:
  • Blanch spinach and keep it side.
  • Heat 1.5 tsp oil in a kadai.
  • Add cauliflower and stir fry.
  • Simultaneously, heat 1.5 tsp oil in a pan and clove, cardamom seeds, fennel seeds add sliced onion to it. Stir fry till onion turns translucent.
  • Add garlic and ginger and stir fry for 15 seconds.
  • By now cauliflower will turn slight brown and change its flavour. Sprinkle little salt and little water, cover and cook.
  • Add tomato and peas to cauliflower and stir fry.
  • Add paneer and stir fry.
  • Grind all the ingredients numbering 5 to 14 to a fine paste.
  • Add to the cauliflower and paneer.
  • Add turmeric powder, grated paneer, sugar and salt to taste.
  • Add water as per your requirement.
  • Stir well and simmer for 2-3 mins.
  • Serve with roti/ naan etc.
Tip:
  • You may blanch cauliflower.
  • You may use fried paneer too.
