Cauliflower Soup




Cauliflower soup is a creamy and a non spicy soup. It is a blend of cauliflower and onion topped with milk. It tastes best when accompanied by garlic bread.

I had this soup for the first time, when I had been to Malaysia. I really loved it and thought of trying it on my own. It turned out well and made me try for broccoli potato soup in a similar manner. 

Here goes the recipe for cauliflower soup.

Measurement: 1Cup = 180 ml
Serves: 2

Ingredients:

  1. Cauliflower (grated) - 1 small
  2. Onion (chopped) - 1 small
  3. Garlic (crushed) - 2 cloves
  4. Butter - 2 tsp
  5. Maida - 2 tsp
  6. Boiled milk - 1/2 cup
  7. Pepper powder - 1/4 tsp
  8. Salt to taste

Procedure:
  • Melt butter in a saucepan, add garlic and onion.
  • Stir fry till onion turns translucent. 
  • Add grated cauliflower to it and saute.
  • Add sufficient water and cook it. Let it cool.
  • Add maida and blend it.
  • Pour it into the saucepan. 
  • Add a cup of water.
  • Now bring it to boil.
  • Add salt to taste and stir well.
  • Add milk, stir well and put off the flame.
  • Sprinkle pepper powder.
  • Serve hot with garlic bread. 
Tip:
  • You may add milk or water as per your requirement. Fresh cream can also be added in addition to or instead of milk.
  • Potato can also be cooked with cauliflower.
