Italian Eggplant Casserole
Ingredients and procedure:
  • Layer 1 - Shallow fried brinjal slices
  • Layer 2 - Ricotta cheese (paneer), bread crumbs
  • Layer 3 - Sauce made with Tomato puree, chopped onion, sugar, salt & pepper (cooked for 5 mins)
  • Topmost Layer - Processed cheese
  • Bake at 180 degrees for 20 mins.
